Tripeptides
Lactotripeptides IPP and VPP are derived from cow’s milk protein. These lactotripeptides consist of three amino acids: isoleucine-proline-proline (IPP) and valine-proline-proline (VPP). IPP and VPP naturally occure in fermented milk and aged cheese varieties.
